This recipe is quick, easy and lovely hot or cold!
BAKED CHICKEN PAELLA
600g skinless/boneless chicken thighs, chopped into chunks
1 garlic clove, crushed
1 red or yellow pepper,chopped
1 onion, chopped
12 small cherry or plum tomatoes,chopped
250g green beans,chopped
2 medium carrots, chopped into fairly small pieces
12 chestnut mushrooms,halved
1 tsp smoked paprika
300g paella rice
600ml chicken stock
- Preheat oven 180c/fan160c/gas 4
- Use low cal cooking spray and add chicken. Fry for 10 mins until browned. Add onion, garlic, pepper, mushrooms and carrots and fry for another 5 mins. Add tomato, beans, paprika, rice and stock and bring to boil.
- Transfer to casserole dish with lid and bake in oven for 25 mins until rice is tender and chicken is thoroughly cooked.
